Course Outline

This course is for students who are interested in a career in catering and have a high level of motivation.

The course is the equivalent to 4 GCSEs and gives you the skills you need to work in field of catering or go on to a L3 programme in a related field of cooking or hospitality. The course combines practical skills with catering theory. It is based at the brand new catering facilities at Highbury Grove School, where you will work in industry-standard kitchens and gain hands-on experience in a live catering environment preparing food for sale to staff and students.

Areas you would cover include preparing, cooking and finishing basic dishes, desserts and baking. You also examine hygiene, safety and storing, preparation and cooking of food.

Entry Requirements

You should usually have 2 or more GCSEs at Grade D or above or a Merit or Distinction in a relevant subject at Level 1. It would be preferable if you had either some work experience in the catering industry or a related qualification but this is not compulsory.

Assessment

Assessment is through on-going assessment of practical demonstrations and course work.

Progression

Learners may progress to the Level 3 NVQ in Professional Cookery or the BTEC Certificate in International Cuisine. Alternatively, learners may choose to enter employment within the hospitality industry.

This course will prepare you for a job, or a better job if you are already working. It is a practical, work related course, and provides a good basis to go on to more advanced qualifications. A BTEC First Diploma provides a good grounding for further study, such as the BTEC National Diploma in Catering or employment in a catering environment.
