BTEC Introductory Diploma in Catering

Course Outline

This course is based in our professional kitchens at Highbury Grove. You will be given opportunities to work with a variety of ingredients and equipment in order to learn the skills needed to produce food in a commercial environment.

Alongside your food preparation and cooking qualification you will also gain qualifications in food hygiene and health and safety, which are needed for work in the catering industry:

• RSH Essential Food Hygiene covers pathogenic micro-organisms, food poisoning, personal hygiene, temperature control, kitchen design, kitchen pests and food legislation.

• CIEH Basic Health and Safety provides you with health and safety understanding.

Entry Requirements

You should have at least 4 GCSEs at Grades E to G, and have an interest in catering.

Assessment

Assessment is through practical assessment and coursework.

Progression

This course is for students who wish to go on to a career in professional cookery. You may wish to go on to further study such as the Level 2 BTEC First Diploma in Catering or an apprenticeship alongside full-time employment.
