Course Outline

18 units - equivalent to 3 A-levels

This course is for students who are interested in a career in catering and have a high level of motivation.

The course is the equivalent to 3 A-levels and gives you the skills you need to work in the field of catering or go on to a degree programme in a related field of cooking or hospitality. This course combines practical skills with catering theory. It is based at the brand new catering facilities at Highbury Grove School, where you will work in industry-standard kitchens and gain hands-on experience in a live catering environment preparing food for sale to staff and students.

You will gain the higher level skills required to work in a catering environment. You will have the opportunity to work on the preparation and cooking of complex dishes and to study kitchen management, including menu planning, food art, product development, staff organisation, training, team development and budget control.

There will be an opportunity for you to organise and run your own team of caterers.

Entry Requirements

At least 5 GCSEs at Grade C or above, including English or Mathematics and at least a B grade in a related GCSE or a Merit grade in A-level 2 vocational qualification. It would be preferable if you had either some work experience in the catering industry or a related qualification.

Assessment

Assessment is through ongoing assessment of practical and coursework.

Progression

You may go into full-time employment in a hotel or restaurant or progress to a university course, such as an HND or degree.
